For the last 6 weeks, I have been on a diet where I have been restricted from everything besides vegetables, nuts, meats and oils. Needless to say it has been hard. Then you run across recipes that you think will be bland and boring but turn out to be fresh and exciting; this is one of them.
Ingredients:
4-5 Roma tomatoes
1/2 cup Sun Dried Tomatoes
1/2 Cup Roasted and Salted Macadamia Nuts
1 Tsp Sea Salt
1/4 Cup Fresh Basil
1/2 Tsp White Pepper
1/4 Tsp Black Pepper
1 Clove Garlic
4 Cups of Hot Water
Instructions:
Simplest instructions. Don't worry about cutting anything or dicing anything. Just throw everything in a really good blender and blend on high for 5 minutes or until blended through. Just a note, as the ingredients settle, the soup tastes better and better with each day!!!
I served mine with home made crackers.
Thyme and Onion Crackers
Don't be fooled by these healthy crackers, they have a wonderful and delicious flavor
Ingredients:
1 Cup of Chopped Sweet Onion
1 Clove Minced Garlic
1/4 Cup Oil
2 Tsp Fresh Thyme Leaves
1/4 Tsp Sea Salt
Pepper to Taste
1 1/2 Cup Flax Meal or Ground Flax Seeds
1/4 Cup Sunflower Seeds (Ground Fine)
Instructions:
1.) Preheat Oven to 225
2.) In a food processor, place onion, garlic, oil, thyme, salt and pepper. Pulse until onion is pureed.
3.) Add Flax Meal and ground sunflower seeds and pulse until combined
4.) On a piece of parchment paper, scoop out half of the dough and roll it between your hands to make a ball, then place it on the middle section of the parchment paper.
5.) Place another piece of parchment paper over the top of the dough and roll the dough between the two pieces of parchment until its about 1/4 inch thick. Cut crackers into size of choosing. Transfer crackers on the paper to a cookie sheet and repeat with other half of the dough.
6.) Bake for 2-3 hours flipping halfway through until the crackers result into a crunchy delicious cracker.
